Potato Chips and Dip
Ingredients
4 medium potatoes, peeled and sliced paper-thin
3T salt
4 cups oil for deep frying
Procedures
1. Slice potatoes to you desired thickness and place them into a bowl of cold water as you slice. Drain, then rinse and drain again.
2. Let the potatoes soak in the salty water for at least 30 mins.
3.Heat oil in a deep- fryer to 185 celsius. Fry potato slices in small batches. Once they start turning golden brown, remove and rain on paper towels. Continue until all of the slices are fried. season with additional salt if desired.
For the Sour Cream and Onion Dip
Ingredients
1t canola oil
2C finely chopped sweet yellow onion
1T minced fresh garlic
2T minced fresh chives
1/4 t ground white pepper
Preparation
1. heat a small skillet over medium-high heat. Add oil to the pan; swirl to coat. Add onion, garlic and a pinch of salt. Cook for 4 mins, stirring frequently. Reduced heat to
medium-low; cook 6 mins, stirring frequently. Cool onion mixture slightly.
2. Combine sour cream, mayonnaise, 1/2 tablespoons chives,pepper and a pinch of salt in a large bowl. Add onion mixture; stir well. Top with remaining chives.
