Chicken Salad Cups
3 C of cooked chicken meat
2 stalks celery
1/2 C red bell pepper, seeded and chopped
1/4 C chopped red onion
1 whole apple, cored and chopped
1/2 head lettuce, sliced and chopped
Wonton wrappers
Dressing
5T mayonnaise
1T honey
2t lemon juice
Salt and pepper
Procedure
1. Prepare all the salad ingredients and toss them together in a large bowl
2. Prepare the chicken salad dressing in a separate smaller bowl. Mix together the mayonnaise, honey and lemon juice. Taste for proper balnce of sweetness and acidity. Add salt and pepper to taste.
3. Gently stir the dressing in with the chicken salad ingredients. Taste and add more salt and pepper if needed.
4. Spray muffin tin generously with oil. Press the wonton wrapper into the cup.
5. Bake at 350 for 8-10 mins, just watch them until they are lightly browned. Remove from the oven and put it in a wire rack to cool.
6. Place the chicken salad into the molded wonton wrapper and serve.
